Ingredients
1/2 cup large flake oats
1/4 cup cottage cheese
1/4 cup pure pumpkin
1/2 cup egg whites
1/4 tsp pumpkin pie spice
1/2 teaspoon cinnamon
1 tsp pure vanilla extract
1 tsp honey
Directions
Place all ingredients in a blender and blend until smooth.
Heat 1 tsp of coconut oil in a pan.
Pour batter into the pan.
Once golden brown, flip and cook the other side.
Serve with a dollop of greek yogurt, real maple syrup & toasted pecans.
